Join us for Prairie Experience VIII

Join us for a wild evening full of great food and entertainment. Come and help us celebrate this year’s great work and help us raise money to continue with the next phase of the Texas Botanical Gardens & Native American Interpretive Center.

This past year, more than 1,700 youth attended educational programs conducted by our staff and volunteers. Proceeds from this event will help us purchase curriculum supplies so that we are able to continue providing educational outreach and programs to youth and adults related to our natural resources and cultural heritage.

The wild game dinner features a once-in-a-lifetime dining experience with owner and Chef Jesse Griffiths, of Dai Due Supper Club and Butcher Shop in Austin. Chef Griffiths embodies the forefront of the new hunting-cooking movement. He has gained national acclaim for his strictly local butcher shop and supper clubs (Bon Appetit, Food & Wine, Country Living, Garden & Gun) and his series of practical hunting schools are the first of their kind.

The New School of Traditional Cookery was founded in 2006, the same year as Dai Due, to provide an educational aspect of their business which promotes responsible use of our wild resources. The aim is to educate, train and empower people within our community to utilize local foods to their fullest.

Chef Griffith’s acclaimed Afield: A Chef’s Guide to Preparing and Cooking Wild Game and Fish throws open the doors of field-dressing for novice and experienced hunters alike, supplying the know-how for the next logical step in the local, sustainable food movement. Stemming from a commitment to locally-grown vegetables and nose-to-tail cooking, Griffiths is an expert guide on this tour of tradition and taste, offering a combination of hunting lessons, butchery methods, recipes, including how to scale, clean, stuff, fillet, skin, braise, fry and more. Filled with descriptive stories and photographs, Afield takes the reader along for the hunt, from duck and dove to deer and wild hog.

This year’s event will include our famous silent and live auctions. Texas Game hunts and trips will be featured items for the auctions as well as artwork and other collectibles.

Need a ride from the Austin area? Seats are available on a chartered bus service for $50. Don’t hassle with that traffic. Journey on this Wild About Wildlife safari to Goldthwaite, Texas for an evening of delectable wild game and live entertainment.

All proceeds benefit Legacy Plaza, a tax-deductible 501(c)(3) non-profit organization.
